cookie dough brownies

Cookie Dough Brownies
Chocolate chunk brownie mix
Bag of mini chocolate chips
1/2 cup milk
1 cup heavy cream
1 cup chocolate chips

Prepare brownies according to package {slightly underbake}.  Cool.

Prepare Toll House Cookie recipe.  Instead of eggs, use 1/2 cup of milk and a little extra flour.  Spread mixture over cooled brownies and chill until hardened.

Prepare chocolate ganache {or use a can of chocolate frosting, like I did!}.  Bring 1 cup heavy cream to a boil.  Take off heat and add 1 cup chocolate chips.  Wait until chocolate melts and stir.  Cool a little bit and pour over cookie dough.

lemon baked pasta

One of my go-to recipes!  Yum, yum, yum!!

The Pioneer superhuman Woman posted this as a main dish, but I tend to use it as a side dish.  I love it all times of the year … yummy with steak and especially yummy with grilled lemon-pepper shrimp {that I may have made and devoured the other night}.

Ingredients
  • 1 pound Thin Spaghetti
  • 4 Tablespoons Salted Butter
  • 2 Tablespoons Olive Oil
  • 2 cloves Garlic, Minced
  • 1 whole Lemon, Juiced And Zested
  • 2 cups Sour Cream
  • ½ teaspoons Kosher Salt, Or More To Taste
  • Plenty Of Grated Parmesan Cheese
  • Flat-leaf Parsley, Chopped
  • Extra Lemon Juice
Preparation Instructions

Preheat oven to 375 degrees. Cook spaghetti until al dente.

In a skillet, melt butter with olive oil over LOW HEAT. When butter is melted, add minced garlic. Squeeze lemon juice into the pan. Turn off heat.

Add sour cream and stir mixture together. Add lemon zest and salt. Taste, then add more salt if necessary. Pour mixture over drained spaghetti and stir together, then pour spaghetti into an oven safe dish.

Bake, covered, for 15 minutes. Then remove foil and bake for an additional 7 to 10 minutes. (Don’t bake too long or the pasta will dry out.)

When you remove it from the oven, squeeze a little more lemon juice over the top. Top generously with Parmesan cheese, then chopped parsley. Give it a final squeeze of lemon juice at the end.

fudge brownie trifle :: yum!

Fudge Brownie Trifle
1 pkg fudge brownie mix
1/4 c water
1/2 cup veg oil
2 eggs
1 T freeze dried instant coffee {dry}
2 {4 oz} pkg chocolate fudge instant pudding mix
4 cup cold milk
1 {10 oz} pkg english toffee bits
1 lg frozen whipped topping

Heat oven to 350 degrees.  Grease bottom of 13×9x2 in pan.  Prepare brownie mix according to pkg directions, using water, oil & eggs.  Stir coffee into batter.  Spread in pan.  Bake as directed; cool completely.

Cut brownies into small squares.  Place half of squares in the bottom of a 3 qt trifle or glass bowl.  Prepare pudding as directed, using milk.  Pour 1/2 the pudding over the brownies in trifle dish.  Top with 1/2 the toffee bits and whipped topping.  Repeat with remaining ingredients.  Cover and refrigerate for at least 4 hours.

easter treat :: a learning moment

A friend sent me this recipe for Resurrection Buns and I couldn’t wait to make it with the girls.  Better than sounding super yummy … I loved the message shared while making them.

So here’s what you need:

  • Pillsbury Grands (or other large) canned biscuit
  • Large marshmallows
  • Melted butter
  • Sugar
  • Cinnamon

Since we’re traveling, I had to make due with what ingredients we could find.  As you’ll see by the photos at the end of this post … I’m thinking the “Grands” in the ingredient list is key! ;)

Step One:
Have each child flatten a biscuit until it’s about 5 inches across.  Then they spread melted butter, sugar and cinnamon on it.  Explain that the spices represent the spices used to anoint Jesus’ body before His burial.

Step Two:
Each child gets one large marshmallow.  This represents Jesus:  it is white because it stands for His purity and His sinless life.  Place the marshmallow in the center of the biscuit; then fold the sides around it forming a “tomb.”  (Help the younger children pinch the sides of their tombs closed – then place them crease-side down on a baking sheet so they won’t open while cooking).  Put more butter, cinnamon and sugar on the outside.  Talk about the sweet taste of the spices and how Jesus gave us the sweetest gift we will ever receive.

Step Three:
Bake the buns according to the directions on the biscuit package.  Note:  they need a little extra cooling time because the marshmallow makes them very hot.

Step Four:
When the children bite into their buns, they will be surprised to find the center empty.  The marshmallow has melted.  As each child discovers the empty tomb, we celebrate that “He is not here; He has risen, just as He said.” (Matthew 28:6)

The girls were really excited while we were making these.  They loved the project, but also had fun talking about what we were doing and why.

We decided we’re going to try another go.  I think because I had smaller biscuits and because of the marshmallow inside … this time I’ll lessen the cooking time, or at least keep a better watch on them!
